EwE - Zucchini, Spinach and Corn Saute

For Eating with Ellie this week, Chaya chose Zucchini, Spinach and Corn Saute.  This is a mixture of zucchini, corn and spinach, sautéed - just like it says on the tin.

There's not a lot to say about this one, other than it made a pleasant side dish.  It would be great with a little chilli for kick, I think.

To see what the other Ellie cooks thought of this dish, visit the LYL section of the EwE website.

It sounds simple and like it would be nice as a side dish rather than as a main :)

Yours looks wonderful. We really liked this dish. It made a lot so I used leftovers in wraps and in soup and if I had had more I would have grilled some chicken and thrown it in...very versatile recipe. Definitely making this one again, so easy and delicious. Also, I do agree with you, it would be fun to give it a kick with some hot sauce or red pepper flakes, that would be a nice touch as well.

Good idea about adding some heat. Also I like Kayte's idea of using it in a wrap. Brilliant. I almost felt like Ellie codified something I make all the time anyway.
